Good afternoon! How are is your week going? Has your area started school yet? I see a lot of back-to-school posts on Facebook. . . and we don’t go back to school (online/distance learning) until September 9! We still have four weeks. The kids are getting antsy and well. . .we’re just trying to make the most of summer while still being socially responsible and safe.
Yesterday we stopped into Costco and found a BOX SET of the classic Baby-sitters Club books! The price is $17.99 and it includes 8 classic Baby-Sitters Club books and an exclusive bookmark. I posted last week about how I found my old vintage Baby-sitter club books in the garage and so many of you were envious – saying they were hard to find these days (ever since Netflix series). . . but make a trip to your local Costco – and get the first 8 books in the collection for $17.99.
While at Costco we picked up some fresh Sockeye salmon, which they have for $9.99/lb right now. It’s boneless – which is awesome and it tastes delicious grilled up with some citrus and dill! I just put it in aluminum foil, sprinkle it with dill and lemon pepper. . .and then add either thin onion slices and/or lemon. I didn’t have lemon yesterday and used some orange slices for a citrus flavor and it was yum! We have been having it paired with roasted brussels sprouts and it makes a filling meal! What have you been making lately?
I’ve got this Quinoa Avocado Spinach Salad with lemon and chickpeas on the mind. It’s full of protein and flavor!
